Meaning: According to bible scriptures, only the High Priest can enter the Holy of Holies, and offer the sacrifice for the atonement his sins and the people. In Catholic teachings, Jesus is also known as the High Priest because He is the one who made the sacrifice (which is Himself) for the atonement of sins.

In Chapter 22, God explains this further.

Meaning: The paschal lamb (offered during the Passover) was used to mark the doors of the Jew. It is the blood of the lamb which spared them from the death of the firstborn. Likewise, it was this event that was the clincher that set the Jews free from slavery. Likewise, it is Jesus, as our savior, who sets us free from the slavery of sin. Jesus on a platter refers to Jesus being the paschal lamb sacrificed.

Our freedom from sin can only be made possible through the forgiveness of God, as how God describes earlier what true forgiveness is. The consequence of sin is death. It must be noted that this death is not a punishment form God but, as God explained, is a consequence of sin. So, the paschal lamb then is also the sacrifice for the forgiveness of sins that Jesus, as the High Priest, makes.

"I AM called to serve" is to confirm that he had to be of age to serve as a priest. It also speaks of the bible verse when Jesus said He came to the world not to be served but to serve.
